Homemade Bircher Muesli

Ingredients

  • 3 tablespoons rolled oats

  • 1 tablespoon pumpkin seeds

  • 1 tablespoon sunflower seeds

  • 1 tablespoon unsweetened coconut

  • 1 teaspoon flax seeds

  • 1 teaspoon chia seeds

  • tiny pinch of sea salt

  • 2 tablespoons plain yogurt (vegan or Greek dairy)

  • ¼ cup frozen berries

  • ½ cup milk (we like unsweetened almond milk)

  • maple syrup or other sweetener, to taste

  • fresh berries (blackberries mashed with a spoon are delish!), more shredded coconut etc, for topping.

Directions

Combine all ingredients (except the sweetener) in a jar or container with a lid. Stir to combine and leave in the fridge overnight. In the morning, add a splash of almond milk if it’s too thick and top with sweetener and toppings of choice.
