Applewood Bacon Egg Muffins
Stay on top of your nutrition in the midst of leading a busy life. Great for a quick high protein on-the- go snack!
(Makes 12)
Ingredients:
6 eggs
8 (1 cup) egg whites
115 grams yam – diced
40 grams (1/2 cup) red onion - diced
110 grams red pepper – diced
3 stalks green onions
4 slices applewood smoked bacon (armour) or 155 grams turkey cranberry sausage (Whole Foods)
Directions:
Preheat oven to 350 degrees
Crack Eggs and mix well with egg whites
Mix in all chopped ingredients
Pour into muffin tin
Bake for 20-25 minutes or until cooked through
