High Fibre & Low Sugar Berry Muffins

These must be the easiest muffins to make, and a great way to get your kids involved!

You can tailor to what is in the freezer and to suit your family's taste.

Ingredients:

2 cups all purpose flour

1 tbsp. baking powder

1/2 tsp salt

2 large eggs

4 tbsp. maple syrup

1/2 cup sugar

1/2 cup rice bran oil

1 1/2 cups milk (any milk)

1 cup fresh / frozen blueberries

1/2 cup wheat bran

1/2 cup raw oats

1/4 cup chia seeds

Directions:

  1. Pre heat oven to 350 degrees F

  2. Whisk flour, baking powder and salt

  3. Separately beat the eggs

  4. Add the syrup, sugar, oil and milk to the eggs

  5. Mix together the egg and flour mixFold through the berries

  6. Pour mixture into muffin tin (makes 12 muffins)

  7. Bake for 25 minutes, or until goldenSprinkle oats and chia seeds on top
